Chocolate "Ooey" Pecan Pie

- 1/2 cup soft margarine melted
- 1 cup light corn syrup
- 1 cup sugar
- 1/4 cup cocoa
- 4 eggs, beaten
- 1teas. vanilla
- 1 teas. salt
- 1/2 cup chopped pecans
- 1/2 cup flaked coconut
- CRUST:
- 36 vanilla wafers, crushed
- 6 Tbls. melted margarine
- 1/1/2 cup crushed pecans
- 3/8 cup sugar
Instructions
- Crust preparation: Combine ingredients and press 2/3 of mixture into pie pan, reserving 1/3 for topping.
- Cool pie shell in refreigerator for at least an hour (or freeezer for 20 minutes).
- Pie Preparation: Combine first 4 ingredients in saucepan; cook over low heat, stirring constatly until sugar dissolves. Cool slightly.
- Add eggs slowly as not to cook egg, vanilla and salt.
- Stir in pecans and coconut and pour into unbaked pie shell.
- Top with reserved crust mixture.
- Bake at 325 degrees for 55 minutes.
