    Recipe Introduction


    During baking, a sponge-like top forms over the creamy custard botton.


    List of Ingredients


    • 3 eggs
    • 1 cup sugar
    • 1 cup milk
    • 2 tbls. flour
    • 4 tbls.lemon juice


    Instructions


    1. In mixing bowl, beat egg whites until stiff; set aside.
    2. In large bowl, beat yolks until thick and lemon-colored.
    3. Slowley add sugar, flour, then milk and lemon juice, beating until well mixed.
    4. Fold in egg whites until they become tiny white puffs in the batter.
    5. Pour filling into 9 inch unbaked pie shell.
    6. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees for 35 minutes.
    7. Remove and cool completely.
