Recipe Introduction
Mom made these cookies every Christmas. Wendy and I loved them.
List of Ingredients
- 1 cup butter
- 2 cups brown sugar
- 3 beaten eggs
- 4 cups sifted flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- FILLING:
- 2 1/2 cups chopped dates
- 1 cup water
- 1 cup sugar
- 1 cup chopped nuts
- Combine and boil over low heat for 10 minutes
- Set aside to cool.
Instructions
- Cream shortening and brown sugar, add eggs and remaining dry ingredients. Mix well and chill.
- Divide dough into 2 parts and roll in rectangle 1/2 inch thick.
- Spread filling on top and roll as jelly roll in waxed paper.
- Chill overnight or until firm to handle. Cut into thick slices and bake 400 degrees for 10-15 minutes.
Final Comments
If you do not want to make the filling you can buy it alread made in a 12 oz can by SOLO in the baking isle.
