    List of Ingredients


    • 2 1/2 cups water
    • 1 cup uncooked long-grain rice
    • 1 cup chopped dried pineapple
    • 2 teas. butter
    • 1/2 grated lime rind
    • 1/4 teas salt
    • 1/4 cup chopped fresh cilantro
    • 1/ 4Tbls. chopped green onions
    • 2 1/2 Tbls. fresh lime juice


    Instructions


    1. Bring 2 1/2 cups water to a boil in a medium saucepan.
    2. Add rice and next 4 ingredients.
    3. Cover, reduce heat, and simmer 20 minutes until liquid is absorbed.
    4. Remove from heat, stir in cilantro, onion and juice.


    Final Comments


    Makes 6 one half cup servings.
