List of Ingredients
- 2 1/2 cups water
- 1 cup uncooked long-grain rice
- 1 cup chopped dried pineapple
- 2 teas. butter
- 1/2 grated lime rind
- 1/4 teas salt
- 1/4 cup chopped fresh cilantro
- 1/ 4Tbls. chopped green onions
- 2 1/2 Tbls. fresh lime juice
Instructions
- Bring 2 1/2 cups water to a boil in a medium saucepan.
- Add rice and next 4 ingredients.
- Cover, reduce heat, and simmer 20 minutes until liquid is absorbed.
- Remove from heat, stir in cilantro, onion and juice.
Final Comments
Makes 6 one half cup servings.
