8-12 fresh mushrooms with large caps
1 6oz can clams, drained & minced -- save ¼cup of clam juice
1 green onion, chopped
1 egg beaten
2 cloves minced garlic
pinch of garlic salt
1 teaspoon oregano
½ cup italian style breadcrumbs
1 Tablespoon melted butter (cooled)
2 Tablespoons of grated parmesan or romano cheese
2 Tablespoons of shredded mozzarella cheese, reserve some for garnish
¼ cup melted butter
Recipe
1. Clean mushrooms by gently brushing away any dirt. Remove stems, chop up and set aside.
2. In mixing bowl, place chopped up stems, clams, onions, garlic salt, minced garlic, butter and oregano....mix through and blend well.
3. Add breadcrumbs, egg, reserved clam juice and blend. Add cheeses.
4. Fill mushroom caps and slightly mound clam mixture.
5. Place mushrooms in slightly oiled baking dish. Pour melted butter over mushrooms. Cover and bake in preheated oven at 350 degrees for about 35-40 minutes.
6. Remove cover and sprinkle more cheese on top and place abck in oven just until cheese melts slightly.
