Recipe Introduction
These are great for appetizers and perfect for entertaining. Everything can be prepared in advance and then bought to the table right before guests arrive.
List of Ingredients
- 2 tablespoons oil
- 2 teaspoons minced ginger
- 1 teaspoon minced garlic
- 1/2 lb ground chicken or turkey
- 1/2 cup chopped water chestnuts
- 1 tablespoon chopped cilantro
- 1 tablespoon chopped green onion
- 1 tablespoon minced lemongrass - bottom 2/3 inch of stalk
- 1 tablespoon fish sauce
- 1 teaspoon chili flakes
- salt and pepper to taste
- 8 large washed butter lettuce leaves
Instructions
- Heat oil in pan and saute garlic and ginger for 1 minute.
- Add ground chicken and stir to make sure chicken breaks up - saute for 5 minutes
- Add water chestnuts and saute for 2 more minutes
- Add cilantro, green onions, lemongrass, fish sauce, chili flakes, salt and pepper
- Place mixture in bowl and cool slightly or refrigerate until thoroughly chilled
- Serve chicken mixture separately and have guests place chicken in the middle of a lettuce leaf and roll
Final Comments
* To add texture and flavor, prepare matchstick carrots, fresh bean sprouts, cucumber, crushed peanuts and have these available for guests to add inside each chicken wrap.
* The ground chicken can be substituted with chicken breast strips.
