Here it is! This is the only recipe I use for peanut butter cookies...I've added some variations at the end of the recipe, courtesy of COOKnQT (who flattered the heck out of me by enjoying these so much!)
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 egg
1 egg yolk
2 teaspoons vanilla extract
1 (18 ounce) jar peanut butter (I sometimes use Peter Pan Honey Roasted, but any brand is great in it)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped peanuts
Recipe
1 In a large bowl, cream butter, white sugar, and brown
sugar until smooth. Add the eggs, yolks, and vanilla; mix
until fluffy. Stir in peanut butter. Sift together the
flour, baking soda, and salt; stir into the peanut butter
mixture. Finally, stir in the peanuts. Refrigerate the dough for at least 2 hours.
2 Preheat oven to 350 degrees F (175 degrees C). Lightly
grease a cookie sheet.
3 Roll dough into walnut sized balls. Place on the
prepared cookie sheet and flatten slightly with a fork. Bake for 12 to 15 minutes in the preheated oven. Cookies should look dry on top. Allow to cool for a few minutes on the cookie sheet before removing to cool completely on a rack.
These cookies taste great when slightly undercooked.

As soon as the first batch was cool enough to try, we both did. YUM - then I had a thought & went 'creative' ... I just have to tell you - if you like chocolate & PB, you gotta try this!
I thought they would be fantastic with a bit of chocolate drizzled over them, but didn't feel like melting any ... then came the brainstorm: as soon as the second batch came out of the oven, I used the smaller end of my pestle to make a small indentation in the center of each .. then using 2 baby spoons (one for pushing), I spooned in some Hot Fudge sauce (right from the fridge, not warmed up) into the indentation (the heat of the cookie melted it to a smooth little button). OMG! It's a good thing no one else was home because there were some very odd sounds from the kitchen! LOL ... Third batch we did the same, but with jelly (like thumbprint cookies) .... All were soooooooooooooo amazing it was ridiculous!
