    Carmelized Onion Pot Roast

    2.5lb beef chuck roast, boneless
    1/2tsp salt/pepper
    1 Tbl veggie oil
    4 med. onions, sliced
    1 C beef broth
    1/2C beer or apple juice
    1T packed brown sugar
    1T cider vinegar
    2T Dijon mustard

    Recipe



    Salt/pepper roast, brown in skillet with dab of oil. Remove from skillet. Reduce heat to medium, add 1T oil and sliced onions. Cook till browned, about 15min. Stir in broth, beer, brown sugar, vinegar, and mustard. Spoon half the onion mixture in crockpot, place roast on onions. Spoon remaining onion mixture on roast. Cover and cook on low 8-9 hrs.
