    Mashed potatoes and peanut butter??? YUMMY!


    List of Ingredients


    • 1 small potato
    • 1 1# box confectioner's sugar
    • peanut butter
    • 1 teaspoon vanilla extract


    Instructions


    1. Peel, then boil potato until done.
    2. Mash potato and add vanilla.
    3. Blend in sugar to stiff consistency.
    4. Pat out onto waxed paper.
    5. Cover with another sheet of waxed paper.
    6. Roll to 1/4" thick.
    7. Remove top layer of waxed paper.
    8. Cover with peanut butter.
    9. Roll, jelly roll fashion, and chill.
    10. Slice when ready to serve.
