Southwestern Casserole

- 1 package (3.4oz.) macaroni
- 1 lb. ground beef
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 can (14oz.) tomatoes, diced
- 1 can kidney beans, drained and rinsed
- 1 can (4oz.) tomato paste
- 1/2 can (4oz.) chopped green chilies
- 1/2 tsp. salt
- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. pepper
- 1 cup Monterey jack cheese, shredded
- 1 jalapeno pepper, seeded, and minced
Instructions
- Cook macaroni, set aside. Cook beef, onion and garlic, drain. Add tomatoes, beans, tomato paste, chilies, and seasonings. Bring to a boil, reduce heat, simmer uncovered 10 minutes. Add cooked macaroni. Top with cheese and jalapeno. Bake at 375 degrees for 30 minutes covered and 10 minutes uncovered.
