    Easy White Cake

    • 2 cups flour
    • 1 1/2 cups sugar
    • 3 tsp. baking powder
    • 1/2 tsp. salt
    • 1/2 cup shortening
    • 1 cup low-fat milk
    • 1 tsp. vanilla
    • 4 egg whites


    Instructions


    1. Peheat oven to 350 degrees. Grease and flour two 8x9 inch round baking pans. Combine dry ingredients in a bowl. Add shortening, milk and vanilla. Using eletric mixer, fitted with paddle attachement, mix on low speed about 1 minute. Stop and scrap bowl. Add egg whites, increase mixer speed and beat about 1 minute, or until smooth and fluffy. Pour batter into two pans. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool completely on wire rack.
