Arroz con Queso (Crock Pot)

- 1 can (16oz.) tomatoes, mashed
- 1 can (16oz.) mexican beans
- 1 1/2 cups long rain rice, uncooked
- 1 cup cottage cheese
- 1 can (4oz.) chopped green chilies
- 3 tblsp. vegetable oil
- 3 cloves garlic, minced
- 2 cups monterey jack cheese, shredded, divided
- 1 onion, finely chopped
Instructions
- Lightly grease crock pot. Mix all ingredients, except 1 cup cheese in large bowl. Pour mixture into crock pot, cover and cook on low 6-8 hours. Sprinkle with 1 cup cheese. 6-8 servings.
