    Arroz con Queso (Crock Pot)

    List of Ingredients


    • 1 can (16oz.) tomatoes, mashed
    • 1 can (16oz.) mexican beans
    • 1 1/2 cups long rain rice, uncooked
    • 1 cup cottage cheese
    • 1 can (4oz.) chopped green chilies
    • 3 tblsp. vegetable oil
    • 3 cloves garlic, minced
    • 2 cups monterey jack cheese, shredded, divided
    • 1 onion, finely chopped


    Instructions


    1. Lightly grease crock pot. Mix all ingredients, except 1 cup cheese in large bowl. Pour mixture into crock pot, cover and cook on low 6-8 hours. Sprinkle with 1 cup cheese. 6-8 servings.
