    Bean and Beef Enchilada Casserole

    • 1 package (8oz.) ground beef
    • 1/2 cup onion, chopped
    • 1 tsp. chili powder
    • 1/2 tsp. ground cumin
    • 1 can (16oz.) pinto beans, rinsed and drained
    • 1 small can diced green chilies
    • 1 carton (8oz.) sour cream
    • 2 tblsp. flour
    • 1/4 tsp. garlic powder
    • 8 --6 inch corn tortillas
    • 1 can (8oz.) enchilada sauce
    • 3/4 cup cheddear cheese, shredded


    Instructions


    1. Cook ground beef and onion, drain. Stir in chili powder and cumin, cook and stir 1 minute. Stir pinto beans, chilies into meat mixture, set aside. In small bowl, stir together sour cream, flour and garlic powder, set aside. Place 1/2 tortillas in bottom of lighty greased baking dish, cutting to fit and overlapping if necessary. Top with half the meat mixture, half the sour cream mixture, and half the enchilada sauce. Repeat layers. Bake covered at 350 degrees for 35-40 minutes or until heated. Uncover, sprinkle with cheese. Bake 5 minutes more.
