    Mexican Chicken and Rice

    List of Ingredients


    • 1 tblsp. oil
    • 1 lb. boneless chicken, cubed
    • 1 onion, chopped
    • 1 green pepper, chopped
    • 1 can corn, drained
    • 1 can kidney beans, drained
    • 1 cup chicken broth
    • 1 cup mild salsa
    • 1 1/2 cups rice
    • 1/4 tsp. cumin
    • 1/2 cup shredded cheddar cheese.


    Instructions


    1. Heat oil, add chicken, onions, peppers and cumin. Cook until tender. Add corn, salsa, broth and beans. Bring to a boil, add rice. Remove from heat. Cover and let stand 5 minutes. Fluff with fork. Sprinkle with cheese.
