Mexican Chicken and Rice

List of Ingredients
- 1 tblsp. oil
- 1 lb. boneless chicken, cubed
- 1 onion, chopped
- 1 green pepper, chopped
- 1 can corn, drained
- 1 can kidney beans, drained
- 1 cup chicken broth
- 1 cup mild salsa
- 1 1/2 cups rice
- 1/4 tsp. cumin
- 1/2 cup shredded cheddar cheese.
Instructions
- Heat oil, add chicken, onions, peppers and cumin. Cook until tender. Add corn, salsa, broth and beans. Bring to a boil, add rice. Remove from heat. Cover and let stand 5 minutes. Fluff with fork. Sprinkle with cheese.
