Southwestern Bean & Rice Salad

- 3 cups cooked long grain rice, cooked
- 1 can kidney beans, rinsed and drained
- 1 medium green pepper diced
- 1 can (2 1/4 oz.) sliced olives, drained
- 1/3 cup lime juice
- 1/4 cup chopped green onions
- 2 tblsp. canola oil
- 1 tblsp. minced fresh cilantro or parsley
- 2 garlic cloves, minced
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
Instructions
- In bowl, combine rice, beans, green pepper, and olives. Combine remaining ingredients. Pour over rice mixture. Toss to coat. Chill at least 1 hour. 8 servings
