    Southwestern Bean & Rice Salad

    List of Ingredients


    • 3 cups cooked long grain rice, cooked
    • 1 can kidney beans, rinsed and drained
    • 1 medium green pepper diced
    • 1 can (2 1/4 oz.) sliced olives, drained
    • 1/3 cup lime juice
    • 1/4 cup chopped green onions
    • 2 tblsp. canola oil
    • 1 tblsp. minced fresh cilantro or parsley
    • 2 garlic cloves, minced
    • 1/2 tsp. salt
    • 1/2 tsp. ground cumin


    Instructions


    1. In bowl, combine rice, beans, green pepper, and olives. Combine remaining ingredients. Pour over rice mixture. Toss to coat. Chill at least 1 hour. 8 servings
