    Warm Shrimp and Pasta Salad

    List of Ingredients


    • 12 oz. fresh or frozen peeled, deveined med. shrimp
    • 8 oz. dried gemelli pasta
    • 1 6 oz. package frozen snow peas
    • 1 small red sweet pepper, chopped
    • 4 green onions, cut into 1 inch pieces
    • 1/4 cup rice vinegar or white wine vinegar
    • 6 tsp. salad oil
    • 2 tblsp. soy sauce
    • 1 tblsp. honey
    • 1/4 tsp. crushed red pepper
    • toasted sesame seeds, optional


    Instructions


    1. Thaw shrimp, if frozen. Cook pasta, adding the peas to the pasta water the last 1 minute of cooking. Drain and return to pan. Add sweet pepper and green onions to pasta mixture, toss to combine. Cover and set aside. Meanwhile for dressing, combine the vinegar, 4 tsp. of the oil and soy sauce, honey and crushed red pepper. Mix well. Set aside. Rinse shrimp, pat dry. Add remaining 2 tsp. oil to a large nonstick skillet, add shrimp to hot oil. Cook and stir about 2 minutes . Add the shrimp to the pasta mixture. Drizzle with dressing mixture. Stir to coat. 4 servings
