    Fiesta Chicken Soup

    List of Ingredients


    • 12 chicken breast tenders, chopped
    • 4 cans chicken broth
    • 2 cans kidney beans, undrained
    • 2 cups salsa
    • 2 cups whole kernel corn, frozen
    • 1 cup instant rice, uncooked
    • 1/2 cup Monterey jack cheese, shredded
    • 1 bag tortilla strips


    Instructions


    1. Cut chicken into 1 inch pieces. In a large sauce pan, combine chicken, broth, kidney beans, salsa and corn. Bring to a boil. Reduce heat and simmer, uncovered 5-10 minutes or until chicken is done. Stir in rice, cover and remove from heat. Let stand 5 minutes. Top bowls of soup with cheese, and tortilla strips
