    Recipe Introduction


    This is good on on a grilled pork tenderloin,as a dip with chicken fingers or on crackers with cream cheese.


    List of Ingredients


    • 2 green bell peppers
    • 6 jalapeno peppers
    • 1 1/2 cups cider vinegar
    • 6 cups sugar
    • 6 oz. liquid pectin


    Instructions


    1. Remove veins and seeds from the peppers. Chop coarsely.
    2. Put peppers into a blender with the vinegar and blend to a puree.
    3. Pour puree in a large pot, add sugar and bring to a full boil.
    4. Add the pectin and boil for 1 minute. Watch carefully so mixture doesn't boil over.
    5. Turn off heat and skim foam.
    6. Ladle into hot,sterilized half pint jars. Leave 1/4" headspace.
    7. Wipe off rims and put on lids. Process 15 minutes in a hot water bath.


    Final Comments


    This jelly can be made without processing, if it is put into containers and kept in the refrigerator.
