Recipe Introduction
This is good on on a grilled pork tenderloin,as a dip with chicken fingers or on crackers with cream cheese.
List of Ingredients
- 2 green bell peppers
- 6 jalapeno peppers
- 1 1/2 cups cider vinegar
- 6 cups sugar
- 6 oz. liquid pectin
Instructions
- Remove veins and seeds from the peppers. Chop coarsely.
- Put peppers into a blender with the vinegar and blend to a puree.
- Pour puree in a large pot, add sugar and bring to a full boil.
- Add the pectin and boil for 1 minute. Watch carefully so mixture doesn't boil over.
- Turn off heat and skim foam.
- Ladle into hot,sterilized half pint jars. Leave 1/4" headspace.
- Wipe off rims and put on lids. Process 15 minutes in a hot water bath.
Final Comments
This jelly can be made without processing, if it is put into containers and kept in the refrigerator.
