    List of Ingredients


    • 1 1/2 lbs boneless skinless chicken breasts (6med)
    • 3 Tbsp. apricot preserves
    • 3 Tbsp peanut butter
    • 1 1/2 cups shredded coconut
    • 3/4 cup crushed Corn Flakes
    • 1 tsp.ground ginger
    • 1/8-1/4 tsp. cayenne pepper
    • 1/2 tsp cinnamom


    Instructions


    1. Cut chicken into 1 1/2" strips.
    2. In a pan,melt together apricot preserves and peanut butter.Add chicken,toss to coat.
    3. Combine the dry ingredients, mix well.
    4. Coat chicken pieces with the dry mix.
    5. Place chicken pieces on a lightly greased baking sheet. Bake at 350 for 8 minutes,turn and bake 8 minutes more or til done. Do not over bake.


    Final Comments


    I improvised a pineapple salsa that I think goes real good with this chicken,Pineapple Salsa1 can crushed pineapple1/2 red pepper diced1/2 orange pepper diced1 bunch green onions choppeddiced jalapenos to tastehoney and or brown sugar to taste.
