Asian Broccoli and RedPepper with Peanut

Recipe Introduction
Makes 6 servings
List of Ingredients
- 2 cups brown rice, cooked
- 1 cup dry roasted peanuts, chopped
- 3 tbsp. soysauce
- 1/2 cup vegetable broth or chicken broth
- 1/2 cup sliced green onions
- 1 tbsp. minced peeled gingerroot (optional)
- 1 tbsp minced garlic
- 6 cups chopped broccoli
- 2 cups chopped red pepper
- 3 oz. cubed tofu
Instructions
- Heat 1/4cup of the vegetable or chicken broth in large skillet on medium-high heat.
- Add green onions, ginger and garlic; Stir-fry 1 to 2 minutes or until tender.
- Add broccoli, redpepper and soysauce and remaining 1/4 cup vegetable or chicken broth.Bring to boil; reduce heat to low.
- Simmer 5 to 6 minutes or until broccoli is tender, stirring occasionally.
- Add cubed tofu and simmer for at least 3 minutes then stir in peanuts.
- Serve vegetable mixtures over hot cooked rice.
