    Makes 6 servings


    List of Ingredients


    • 2 cups brown rice, cooked
    • 1 cup dry roasted peanuts, chopped
    • 3 tbsp. soysauce
    • 1/2 cup vegetable broth or chicken broth
    • 1/2 cup sliced green onions
    • 1 tbsp. minced peeled gingerroot (optional)
    • 1 tbsp minced garlic
    • 6 cups chopped broccoli
    • 2 cups chopped red pepper
    • 3 oz. cubed tofu


    Instructions


    1. Heat 1/4cup of the vegetable or chicken broth in large skillet on medium-high heat.
    2. Add green onions, ginger and garlic; Stir-fry 1 to 2 minutes or until tender.
    3. Add broccoli, redpepper and soysauce and remaining 1/4 cup vegetable or chicken broth.Bring to boil; reduce heat to low.
    4. Simmer 5 to 6 minutes or until broccoli is tender, stirring occasionally.
    5. Add cubed tofu and simmer for at least 3 minutes then stir in peanuts.
    6. Serve vegetable mixtures over hot cooked rice.
