Recipe Introduction
Scapes are the flower stalks found on members of the Allium family (onions, leeks, chives, and garlic.) Garlic scapes, which only appear on the hardneck & elephant garlic varieties.They curl upward as they grow (except elepant which is straight), ultimately straighten, and then grow little seed-like bulbs.
When garlic scapes are still in full curl, they are tender and delicious. They provide a subtle garlic flavor and crunchiness if added to salads and soups, they cook well in stir fries, and can be processed in vinegars, as pickles, or into a green "pesto" sauce. Scape can keep for weeks in your refigerator!
Use the first 12 inches or so from the bottom (cut) end of
the scape. As it gets later in the garlic season, the scape becomes
tough and you may want to peel it before you chop.
These young curling flower stalks are tender, yet crunchy, with a subtle garlic flavor, but without the garlic "bite." Garlic scapes are a delicacy in some Asian cuisines and are available from our farm from early May till mid June.

Garlic Scape Ideas:
-You can add sliced scapes to any stir fry recipe.
-Slice and sprinkle over any pasta, or slice and cook them in almost
any sauce recipe.
- Great in guacamole and fresh salsa, too.
- Chop & add to softened cream cheese.
-Add chopped fresh scapes when serving a light garlic soup; can also
add them to buttered, french bread floated on the soup. -Use them as
you would green onions, they're just better.
- Good in salads, on bruschetta, pizza.
- An excellent addition to stocks....and much Asian cuisine.
-Put in Thai chicken/basil/coconut soup.
