Marshmallow Easter Eggs

- 2 envelopes unflavored gelatin
- 6 tablespoons cold water
- 1 1/2 cups sugar
- 1/2 cup water
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- semisweet chocolate chips, melted
Instructions
- In the bottom of a large glass bowl dissolve gelatin in 6 tablespoons water. Bring sugar and remaining water to a boil, pour over gelatin mixture and add salt and vanilla.
- Beat at high speed for about 15 minutes, until very stiff and fluffy.
- Prepare a pan by filling with about 1 to 2 inches of flour. Make egg shaped intentions with the back of a spoon.
- Place spoonfuls of marshmallow mixture into pan. Let set and dip in melted chocolate chips.
