    Marshmallow Easter Eggs

    • 2 envelopes unflavored gelatin
    • 6 tablespoons cold water
    • 1 1/2 cups sugar
    • 1/2 cup water
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla
    • semisweet chocolate chips, melted


    Instructions


    1. In the bottom of a large glass bowl dissolve gelatin in 6 tablespoons water. Bring sugar and remaining water to a boil, pour over gelatin mixture and add salt and vanilla.
    2. Beat at high speed for about 15 minutes, until very stiff and fluffy.
    3. Prepare a pan by filling with about 1 to 2 inches of flour. Make egg shaped intentions with the back of a spoon.
    4. Place spoonfuls of marshmallow mixture into pan. Let set and dip in melted chocolate chips.
