Lemon Bars

- 1/4 cup butter
- 3 tablespoons sugar
- 3/4 cup flour
- 2 beaten eggs
- 3/4 cup sugar
- 1/4 teaspoon lemon zest
- 3 tablespoons lemon juice
- 2 tablespoons flour
- 1/4 teaspoon baking powder
- powdered sugar
Instructions
- Grease an 8x8x2-inch pan. In a small mixing bowl beat butter on medium speed for about 30 seconds. Add 3 tablespoons sugar then beat until fluffy. Stir in 3/4 cup flour. Pat into bottom of the pan. Bake at 350 degrees for 15 minutes.
- Meanwhile in a mixing bowl combine egg, sugar, zest, lemon juice, 2 tablespoons flour and baking powder. Beat on medium speed about 3 minutes or until slightly thickened, then pour over baked layer in pan.
- Continue baking for 25 to 30 minutes or until edges are lightly brown and center is set.
- Cool, dust lightly with powdered sugar if desired. Cut into 16 bars.
