    Danish Rice Pudding

    Source of Recipe

    Family Recipe

    Recipe Introduction

    One of the Danish traditions that came from my mother is to have an "almond present" on Christmas Eve. Everyone has a bowl of rice pudding and whoever gets the almond in their pudding gets the special present.

    List of Ingredients

    4 cups whole milk or half and half
    3/4 cup rice*
    1/2 cup sugar
    1/2 teaspoon almond extract**
    1/2 cup heavy cream
    2 tablespoons sugar
    Sweetened raspberries

    * I use CalRose
    ** Optional: instead of almond extract cook 1 or 2 vanilla beans with rice and milk

    Recipe

    Over low heat cook the rice in the milk or half and half until the rice is done and the milk is starting to thicken. Be careful not to let it scorch. This can be done in a rice cooker if you're very careful. Start it in cook mode until the rice starts to simmer, as soon as it comes to a simmer turn it down to keep warm and let it cook until done.

    When the rice is cooked stir in sugar and flavoring and put in refrigerator to cool. Whip cream and sugar until stiff and fold into rice pudding.

    Serve with raspberries if desired.
