Lime Sherbet

- 1 1/4 cups sugar
- 1 envelope unflavored gelatin
- 2 1/4 cups water
- 1/2 teaspoon lime zest
- 1/2 cup lime juice
- 1 1/2 cups milk
- 2 egg whites
- 1/4 cup sugar
Instructions
- Combine sugar and gelatin in saucepan. Stir in water and zest. Heat to boiling, simmer 5 minutes. Remove from heat and stir in lime juice, strain into freezing canister.
- Cool 30 minutes, then stir in milk. Beat egg whites until foamy and double in volume. Beat in 1/4 cup cugar, add to mixture in canister and freeze according to manufacturers directions.
- Add a little green food coloring if desired. Makes about 2 quarts.
