- 2 pounds carrots, cut in strips
- 1/2 cup mayonnaise
- 1 tablespoon minced onion
- 1 tablespoon prepared horseradish
- salt and pepper to taste
- 1/4 cup fine cracker crumbs (approx. 6)
- 2 tablespoons butter
- chopped fresh parsley
Instructions
- Cook carrots until fork tender. Drain, saving 1/4 cup of liquid.
- Place carrot strips lengthwise in 9 X 13-inch casserole dish.
- Combine carrot juice with mayonnaise, onion, horseradish, salt and pepper. Pour over carrots.
- Sprinkle cracker crumbs over the top and dot with butter. Sprinkle with parsley.
- Bake, uncovered, at 375 degrees for 15 to 20 minutes.
- Serves 6 to 8
