    Zucchini Meatloaf

    List of Ingredients




    2 eggs, slightly beaten

    1 cup shredded zucchini (1 large or 2 small)

    1/2 cup of Italian Bread Crumbs

    1/2 cup chopped onion

    1 teaspoon salt

    1/2 teaspoon dried oregano leaves

    1/4 teaspoon pepper

    1 pound lean ground turkey


    Topping

    2 Tablespoons of packed brown sugar

    1/4 cup of ketchup

    3 Tablespoons of Dijon Mustard



    Recipe



    Heat the oven to 350°F. In large bowl, mix all meat loaf ingredients until it is well blended. Press the mixture into a greased 9 inch pie pan. Bake for 1 hour.

    In small bowl, mix together the brown sugar, ketchup and Dijon mustard.

    Remove meat loaf from oven. Spread the mixture over loaf. Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center. Let stand 5 minutes before serving.
