I don't remember where I got this recipe, but it is really very good. It makes me think of my brother-in-law, Daren because he likes pumpkin anything. Although I have to say if it weren't for him, I never would have tried pumpkin ice cream. That is yummy too!
List of Ingredients
4 eggs
2 cups sugar
1 cup oil
2 cups flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
Dash of salt
1 tsp. nutmeg
2 cups pumpkin
Frosting:
4 oz. cream cheese, softened
1/2 of a 1 lb. box of powdered sugar
4 tbs. butter
1 tsp. vanillaRecipe
Heat oven to 350F. Blend eggs, sugar and oil in a large bowl. Sift dry ingredients and add to sugar mixture. Fold in pumpkin; don’t use mixer. Pour into a greased 9x13 inch baking dish. Bake for 35 minutes (I do the toothpick test).
Using a mixer, combine all frosting ingredients and frost the cake when cool.
