Chicken Enchiladas

- 2 boneless chicken breasts, cut into strips
- 1 small can enchilada sauce
- 1 small can green chilies
- 2 cups shredded cheese
- salsa
- 4 small whole wheat or low carb tortillas
Instructions
- Preheat oven to 375F.
- Cook chicken in skillet until no longer pink.
- Add half of the can of enchilada sauce, green chilies, 1/4 cup of salsa and 1 cup shredded cheese.
- Spoon mixture into 4 tortillas, roll up and place, seam side down, in a baking dish sprayed with cooking spray.
- Pour remaining sauce on top, sprinkle with remaining cheese.
- Bake for 15 to 20 minutes.
- Top with salsa, chopped green onion and black olives.
