    Chicken Enchiladas

    List of Ingredients

    • 2 boneless chicken breasts, cut into strips
    • 1 small can enchilada sauce
    • 1 small can green chilies
    • 2 cups shredded cheese
    • salsa
    • 4 small whole wheat or low carb tortillas


    1. Preheat oven to 375F.

    2. Cook chicken in skillet until no longer pink.

    3. Add half of the can of enchilada sauce, green chilies, 1/4 cup of salsa and 1 cup shredded cheese.

    4. Spoon mixture into 4 tortillas, roll up and place, seam side down, in a baking dish sprayed with cooking spray.

    5. Pour remaining sauce on top, sprinkle with remaining cheese.

    6. Bake for 15 to 20 minutes.

    7. Top with salsa, chopped green onion and black olives.

    Final Comments

    I usually double the recipe for 5 of us
