Grilled Chicken Sandwiches

List of Ingredients
1/4 c. plus 2 tbs. extra virgin olive oil
Finely grated zest of lemon
1 1/2 tbs fresh lemon juice
1 tbs. thyme leaves
2 gloves garlic
kosher salt and ground pepper
2 tomatoes, thickly sliced
12 1/2 inch think chicken breast cutlets (2.5 lbs)
6 ciabatta rolls-split
6 1/3 inch think slices of fresh mozzarellaRecipe
Combine oil, zest, thyme, garlic and salt & pepper to taste.
Coat tomatoes and chicken with mixture- let sit at room temp. for 30 minutes or longer
Light grill- brush rolls with remaining oil. Grill until golden; add chicken to grill; grill over high heat, turning once.
Place chicken on grilled rolls and top with mozzarella, tomato and basil.
