1 Tbls gelatin
½ cup cold water
½ cup sugar
1 Tbls cornstarch
½ cup milk
¼ tsp salt
2 egg yolks – slightly beaten
1 8-oz pkg cream cheese, softened
1 Tbls grated lemon rind
¼ cup lemon juice
1 tsp vanilla
2 egg whites, beaten stiff
1 cup heavy cream (whipped)
1 small can crushed pineapple
Crust:
2 cups graham cracker crumbs
1 tsp cinnamon
¼ tsp salt
1 cup sugar
½ cup butter – melted
½ cup chopped pecans

Directions
Soften gelatin in cold water.
Combine salt, sugar, and cornstarch. Add to milk in double boiler. Boil until sugar is dissolved, add beaten egg yolks, stirring constantly until mixture thickens. (Mom’s test was until the mixture coats a spoon)
Add gelatin and set aside to cool. Once mixture has cooled, add cream cheese, lemon rind, juice, and vanilla. Fold in stiffly beaten egg whites and cream(that has been whipped). Add crushed pineapple.
Pour into cake pan lined with crust mixture. Top with a little of the remaining crust mixture.
Chill overnight.
Crust:
Melt butter in a saucepan, add sugar, salt, cinnamon. Mix with graham cracker crumbs and chopped pecans. Press most of the crumb mixture into a glass 13 x 9 pan. Save a little of the crumb mixture for the top.
