    FRUIT COCKTAIL CAKE

    List of Ingredients




    Ingredients

    Cake:
    1½ cups sugar
    ½ cup crisco oil
    3 eggs
    1 large can Fruit Cocktail (drained)
    2 cups + 2 Tbls flour
    ½ tsp salt
    2 Tbls fruit juice

    Frosting:
    ½ cup butter
    ½ cup evaporated milk
    ¾ cup sugar
    2 tsp vanilla
    ½ cup chopped pecans

    Directions

    Cake:
    Cream sugar, oil and eggs thoroughly. Whip in well-drained fruit by hand until batter has lots of bubbles in it. Sift dry ingredients together. Fold into the batter. Pour into 9” x 12” well-greased and floured cake pan. Sprinkle with coconut if desired.

    Bake at 375 for 30 minutes (depending on oven, you might try baking at 350 for 40 minutes)

    Frosting:
    Mix butter, evaporated milk, and sugar together in a saucepan. Boil for 2 minutes. Remove from heat, add vanilla and nuts. Pour on cake while both are hot.
