    Alabama Caviar with Balsamic Vinaigrette

    List of Ingredients




    2 (14 oz.) cans cooked black beans
    2 cans chopped tomatoes
    1/2 large sweet red pepper
    1/2 large sweet green pepper
    1/2 small sweet Vidalia onion
    4 cloves minced garlic
    1 Tbsp. hot sauce
    1 1/3 balsamic vinaigrette dressing

    Balsamic Vinaigrette


    1 cup extra virgin olive oil
    1/3 cup balsamic vinegar
    1 Tbsp. dried parsley flakes
    1/4 Tbsp. thyme
    1/4 Tbsp. black pepper
    1/2 Tbsp. salt
    1/4 Tbsp. sugar
    4 cloves minced garlic

    Recipe



    Balsamic Vinaigrette

    1. Combine ingredients in a capped jar and shake vigorously.

    2. Refrigerate until ready to use.

    Caviar

    1. Drain the beans and tomatoes.

    2. Chop the peppers and onions

    3. Stir in the vinaigrette.

    4. Refrigerate for at least about eight hours so the vegetables can marinate
