    List of Ingredients




    4 lean back bacon rashers
    1 large garlic flat bread
    45 ml (3tbsp) tomato puree or tomato ketchup
    ½ small red onion, sliced
    3 thin slices courgette
    Quarter of red pepper, seeded and cut into thin slices
    4-5 asparagus spears
    1 mushroom, quartered
    75 g (3oz) mozzarella, sliced
    2-3 slices tomato

    Recipe



    Place the bread on to a non-stick baking tray. Spread the tomato ketchup or puree over the bread. Top with remaining ingredients, leaving the tomatoes until last. Place in a pre-heated oven and cook for approximately 15-20 minutes.

    Serving Suggestion:

    Serve with a tomato, red onion and pepper salad.

    TIP: This recipe used a garlic flat bread - try using cheese and onion, sundried tomato or a plain pizza base.

    Serves 2.
