    Bengali-Style Oven-Fried Potatoes

    # 2 lb Russet potatoes
    # Olive oil spray
    # 1/2 teaspoon Turmeric
    # 1 teaspoon Cumin
    # 1 teaspoon Cayenne pepper
    # Salt & pepper to taste

    First remove oven racks & spray them with oil. Now preheat your oven to 400F. Wash potatoes & slice them lengthwise into sticks 1/2` thick or crosswise into rounds 1/3` thick. Next transfer the potatoes to a baking pan & spray well with oil. Season the potatoes with the turmeric, cumin, cayenne pepper, salt and black pepper to taste. Toss to coat.



    Now place the rounds in a single layer on the oven racks. Place the racks in the center of the oven and bake until the potatoes are tender, with a deep, golden-brown crust, about 20 to 25 minutes. Serve piping hot. As I mentioned earlier, a side dish of curried vegetable will go well with this dish, but if you want, it’s a perfect snack food, to eat with your fingers, as an appetizer for your guests.
