    CHESTER COUNTY MUSHROOM TAPENADE

    List of Ingredients




    1 cup black olives, finely chopped
    3 cloves garlic, minced
    3 ounces sun dried tomatoes, chopped
    3-4 tablespoons good grade pesto sauce (home made or commercial)
    Combine above ingredients and allow to marinate during the rest of the preparation.
    Ingredients:
    1 cup good grade virgin olive oil
    6 ounces button mushrooms
    6 ounces cremini mushrooms

    Recipe



    Chop mushrooms finely and sauté 2-3 minutes until soft. Drain and reserve liquid.
    Ingredient:
    1/2 cup good grade freshly grated Romano cheese.
    Add mushroom mixture to olive and tomato marinade, mix well. Cook on medium heat for 5 minutes. Remove from heat and add 1/2 cup freshly grated Romano (or Parmesan) cheese. Use reserve liquid to keep moist not wet.
    Ingredient:
    Frozen puff pastry
    1. Prepare puff pastry according to package instructions.
    2. Cut 24 4" squares and keep covered with damp cloth.
    3. Place 1-2 tablespoons of mixture in the center of each square.
    4. Mold dough to form pyramid pinching all sides to secure.
    5. Brush with beaten egg.
    6. Bake in a 300 degree pre-heated over for 15-20 minutes or until golden brown.
    Note: Makes 24 hor d'oeuvres. Mixture can also be served on toast points.
