    2 medium baking potatoes
    Melted butter
    Salt and pepper
    1 1/4 cups (300 mL) finely shredded Canadian Cheddar cheese
    6 slices side bacon, cooked, chopped
    3 tbsp (45 mL) finely chopped green onions

    Recipe



    Preheat oven to 375 °F (190 °C).

    Cut thin slice from ends of each potato; discard. Cut potatoes into 1/4 inch (5 mm) thick slices. Dry slices and place in single layer on lightly greased shallow baking sheet. Brush with melted butter; sprinkle with salt and pepper.

    Bake 10 minutes or until potatoes are tender. Combine Canadian Cheddar cheese, bacon and onions. Spoon onto potato slices.

    Bake 5 minutes longer or until cheese is melted.

    Variations:

    Swiss Cheese and Ham Potato Snacks:


    Use finely shredded Canadian Swiss cheese instead of Canadian Cheddar cheese. Substitute 1/2 cup (125 mL) finely chopped cooked ham for bacon.

    Oka and Mushroom Potato Snacks:

    Use finely shredded Canadian Oka or Saint-Paulin instead of Cheddar cheese. Instead of bacon add 1 cup (250 mL) finely chopped fresh mushrooms, sautéed in butter and seasoned to taste with salt and pepper.
