Cheddar & Bacon Potato Skins

4 baking potatoes - scrubbed clean
vegetable cooking spray
4 turkey bacon slices
3/4 cup lowfat cheddar cheese - shredded
1/4 cup nonfat sour cream
1 tablespoon fresh chives - minced
Recipe
Preheat oven to 425 degrees F. Bake potatoes until done (about 1 hour, depending on size). Allow to cool slightly. Cut in half, scooping out most of the pulp (but leaving about a 1/4 inch border).Place hollowed out potatoes on baking sheet. Spray with cooking spray. Bake until crisp (about 8 minutes). Meanwhile, cook bacon in frying pan. Chop cooked bacon and blot with paper towel to remove extra fat. Sprinkle the cheese evenly amongst the shells. Bake until cheese melts (about 5 minutes). Top with bacon, sour cream, and chives.
