List of Ingredients
3 cups cooked, drained, rinsed black-eyed peas
1 cup cooked rice
1/2 cup chopped green onion, including tops
1/2 cup oil
3/4 cup cider vinegar
1/4 cup sugar
1 teaspoon salt
1 to 2 teaspoons cayenne pepper
Recipe
Mix all ingredients together gently. Serve chilled over lettuce, garnished with chopped tomato.
