List of Ingredients




2 sweet potatoes

1 T. fresh lemon juice

1 t. olive oil

1 c. mayonnaise

1/2 t. fresh thyme

Salt and pepper to taste

Wrap the potatoes in aluminum foil and bake for 45 minutes at 350 degrees. Cool to room temperature and peel. Place in food processor with remaining ingredients and blend until smooth. Serve with raw vegetables or chips; also makes a good sandwich spread. Makes about 3 cups.
