    5 to 6 large, ripe tomatoes or 1 large can tomato pieces, drained
    1/4 cup extra-virgin olive oil
    2-3 leaves fresh basil, chopped
    1/4 cup finely chopped cauliflower
    1/4 cup finely diced red pepper
    2 cloves garlic, minced
    dash Tabasco sauce
    salt/pepper to taste
    grated Parmesan cheese, for topping
    I loaf Calabrese bread or favourite crusty bread, sliced into 1-inch thick pieces

    Recipe



    Blend all ingredients in bowl. Refrigerate a few hours or overnight.

    Add about 2 tbsp. mixture to top of bread slices. Sprinkle with cheese. Place on ungreased cookie sheets and broil for 8 to 10 minutes.

    Serves 8 to 10
