    1 pound boneless chicken breast, cut into bite-size pieces or strips
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon paprika
    1 egg
    1/2 cup all-purpose flour
    1/4 cup milk
    1 cup cracker crumbs or flour
    Canola or vegetable oil

    Recipe



    Sprinkle chicken breasts with salt, pepper and paprika; set aside.
    Combine egg, flour and milk and stir until smooth. Dip chicken in egg mixture then roll in cracker crumbs or flour.
    Pour oil into frying pan to a depth of 1-inch. Heat until 325 degrees. Fry chicken in hot oil until golden brown on both sides. Drain on paper towels.

    Serve as an appetizer or a main dish.

    Yields 3 dozen.
