    Green Olive, Country Ham & Gruyere Fritters

    List of Ingredients

    6 eggs, separated, whites reserved
    3/4 cup milk
    1 1/2 cups flour
    1 1/2 pounds Gruyere cheese, grated
    1/2 cup cooked country ham, minced fine
    2/3 cup grated Parmesan cheese
    1/2 cup pitted green olives, minced fine
    1 tablespoon minced garlic
    Salt and freshly ground black pepper, to taste
    Tabasco, to taste
    2 tablespoons chopped fresh Italian parsley
    Peanut oil for frying

    Recipe

    In a bowl, whisk the egg yolks until lemon-colored. Stir in milk, then gradually add flour and beat until smooth. Using a rubber spatula, fold in Gruyere, ham, Parmesan, olives, garlic, salt, pepper, Tabasco and parsley.

    In a separate bowl, beat egg whites until stiff but not dry. Fold the yolk mixture into the whites.

    Heat oil in an electric skillet or deep, heavy pot to 350 degrees (use a deep-frying thermometer).

    Drop the batter into the oil by spoonfuls and cook, turning once if necessary, until golden. Fry in batches, taking care not to overcrowd the frying oil.

    Drain and serve immediately.

    Makes 12 servings.
