    2 English cucumbers
    4 red Belgian endives
    1 cup Delouis fils Fresh Mayonnaise (available in Deli)
    1 teaspoon Urban Accents„§ Fisherman¡¦s Wharf seasoning
    1 teaspoon freshly squeezed lemon juice
    3 tablespoons minced chives, divided
    2 (14-ounce)lobster tails, cooked, shelled, cut into large cubes
    1/2 cup diced celery
    salt and freshly ground pepper to taste
    8 thin lemon twists for garnish
    24 chive stems for garnish

    Thinly slice one cucumber into 64 slices; set aside. Cut remaining cucumber into 2-inch julienne strips. Reserve 8 endive leaves for garnish; set aside. Cut remaining endives into 2-inch julienne strips.

    In mixing bowl combine mayonnaise, Urban Accents„§ Fisherman¡¦s Wharf seasoning, lemon juice and 2 tablespoons chives.

    Transfer 1/4 cup of mayonnaise mixture into another bowl. Add julienne cucumbers and endive; toss to coat. Set aside. Add lobster chunks to remaining 3/4 cup mayonnaise. Stir in celery and season with salt and pepper to taste.

    Line each of 8 martini glasses with 8 slices of thinly sliced cucumber. Divide julienne cucumbers-endive mixture into glasses. Top with lobster mixture.

    Garnish each glass with an endive leaf, 3 chive stems and a lemon twist. Sprinkle with remaining 1 tablespoon chives. Serve immediately.
