    2 whole garlic bulbs

    3 tablespoons olive oil, divided

    1/2 packed cup bottled roasted red peppers, drained

    3 tablespoons sun-dried tomato pesto or softened sun-dried tomatoes, diced

    3 tablespoons shredded Parmesan or Romano cheese

    Ground black pepper

    Salt, optional

    Low-fat, high-fiber crackers or diagonally sliced baguette bread

    Preheat the oven to 350 degrees. Cut about 1/4 inch off the top of each garlic bulb. Place garlic on a square piece of foil. Drizzle about 1 teaspoon olive oil over the top of each bulb; wrap the foil over the bulbs, folding the edges of foil to seal the packet. Bake until garlic is soft, about 45 minutes. Let cool slightly, then remove garlic cloves (you will be able to squeeze the cloves from their skins).

    Place garlic in a small food processor. Add roasted red peppers, sun-dried tomato pesto, remaining olive oil and cheese. Pulse briefly to make into a spread. Do not overprocess; the ingredients should remain distinctive. (If you don't have a small food processor, use an electric mixer.)

    Add pepper and salt to taste. Serve with crackers or bread.

    Serves 4.
