1 pound ground chicken or turkey
3 cups shredded Chinese (Napa) cabbage
½ teaspoon cracked black pepper
½ cup Tennessee Gourmet™
Salad Dressing Plus
10 – 12 6-inch egg roll wrappers
½ cup finely chopped scallions (green onions)
¼ teaspoon kosher salt

Tennessee Gourmet™ Salad Dressing Plus makes an excellent dipping sauce for these appetizers. Minced shrimp or pork may be substituted for the chicken.
In a medium sauté pan, sauté ground chicken until cooked, about 5 minutes. Remove from sauté pan, drain well, and cool completely. In a medium mixing bowl, combine cooked chicken, cabbage, scallions, pepper, salt, and Tennessee Gourmet™ Salad Dressing Plus. Marinate, refrigerated, for 2 hours. Remove from refrigerator and bring to room temperature.
Place 1 to 2 tablespoons chicken/cabbage mixture in the middle of each egg roll wrapper. Wet edges with water, roll, fold, and seal. Preheat oil in an electric skillet or deep-fryer to 350° F. and deep-fry wraps in batches of three or four until lightly browned, 2 to 3 minutes (or until they float). Carefully remove from oil, drain on paper towels, and serve.
