    Million Dollar Baby Croquettes

    Two distinctly different croquettes served side by side over dressed greens -- serve on side plates as an elegant heavy appetizer.
    Crab Croquettes:
    2 slices dried bread, crusts removed
    2 TBS cream
    1 TBS mayonnaise
    1 TBS Worcestershire sauce
    1 TBS Parsley Flakes
    1 tsp Sambal or a dash of hot sauce (optional)
    1 TBS baking powder
    1 tsp OLD BAY Seasoning
    1/4 tsp salt
    1 egg, beaten
    1 pound fresh lump crab meat

    Break bread into small pieces and moisten with milk. Add remaining ingredients (except crab) and combine well, then gently fold in crab. Shape mixture into small, 2 inch cakes and pan fry in a heavy skillet with extra virgin olive oil (or olive oil and butter) until golden-brown on both sides. Serve over fresh dressed greens.

    Chevre Croquettes
    1 log of fresh Colorado Chevre
    olive oil
    Italian breadcrumbs, seasoned to taste
    Seasoning to taste

    Slice chevre into medallions, brush with olive oil and generously, but delicately, pack in dry breadcrumbs that you've seasoned to taste.

    Pan fry in a heavy preheated skillet with olive oil until browned. Serve along with crab croquettes over dressed greens.
