    List of Ingredients




    * 2 (8-ounce) packages cream cheese or reduced-fat or no-fat cream cheese, at room temperature
    * 1 tablespoon bottled steak sauce of choice
    * ½ to 1 teaspoon minced peeled garlic
    * ½ teaspoon curry powder or to taste
    * 1½ cups ground or finely chopped cooked chicken (see note)
    * 1/4 cup minced green onion (include sone green tops)
    * 2 tablespoons minced parsley (no stems)
    * About 1/4 to 1/3 cup mild or medium-spiced mango chutney sauce (optional)
    * 1/4 cup toasted chopped blanched almonds or pecans or English walnuts or cashews
    * Crisp assorted crackers or Melba toast for spreaders

    In a medium bowl, combine cream cheese, steak sauce, garlic, and curry powder; beat at medium speed of an electric mixer until light, fluffy, and smooth. Stir in chicken, green onion, and parsley, mixing well. Shape mixture into a long "log", about 9 inches in length. Or, spoon into a lightly greased 3-cup mold, packing mixture well. Cover "log" or mold in plastic wrap and refrigerate for at least 4 hours, until thoroughly chilled and firm. Just before serving, arrange "log" (or unmold mold) on a serving plate; spoon chutney sauce over top and sides of "log" or cheese mound, if desired. Sprinkle desired toasted nuts over top and sides of "log" or cheese mound. Accompany with assorted crisp crackers or Melba toast.

    Note: May poach chicken breasts or ground uncooked chicken in water to just cover chicken in a medium heavy saucepan for about 20 to 25 minutes for 1 to 2 chicken breasts (10 to 15 minutes for ground chicken) over low to moderate heat; drain thoroughly. May also saute ground uncooked chicken in a medium heavy skillet lightly coated with non-caloric vegetable cooking spray until done but not browned, if desired.

    Variation: Omit curry powder; add about 1/8 to 1/4 teaspoon saffron to cheese mixture.
