Recipe Introduction
Celery Victor is one of California's traditional dishes, created several decades ago by Victor Hirtzler of the Saint Francis Hotel in San Francisco. It can be served as a first course or in place of a salad.
Celery does deserve to be more popular. In the Middle Ages, it was recommended for "calming irritated states of mind." Today, it is still known as a nerve calmer. Celery is always available, moderate in price, and low in calories.
List of Ingredients
1 medium bunch of celery
3 cups chicken broth (homemade or canned)
1 cup french dressing (recipe follows)
Salt
Pepper to taste
Fresh red pepper (or canned or bottled pimiento) for garnish
Recipe
Wash and trim the celery, and cut into 5-inch stalks. Place the broth in a saucepan. Drop in the stalks. Simmer covered just until tender, about 25 minutes. Do not overcook. Cool the celery in the broth. This delicious celery-flavored broth may be saved for later use as soup.
Prepare a basic French dressing by combining 2/3 cup olive oil with 1/3 cup wine vinegar. Season with salt and pepper to taste, and mix well with fork.
Remove the celery from the broth and place in a bowl. Pour the dressing over it. Chill for several hours or overnight.
To serve, remove celery from dressing. Place 3 stalks on a small serving plate. Spoon some of the dressing on each serving. Garnish with a few strips of pimiento or red pepper in an "X" design. Let stand at room temperature for about 15 minutes before serving, for the fullest flavor.
