    4 large veal fillets cut accross the grain (2lb.)
    4 eggs
    3 T. finely chopped parsley
    4 slices fat ham
    2 T. flour
    2-3 T. cooking oil
    1 T. butter
    salt
    ground pepper

    Recipe



    Pound meat into large fillets, salt and pepper both sides and then sprinkle generously with parsley. Place a piece of ham and a shelled hard-boiled egg on each fillet. Roll up and tie with white thread, dredge in flour and quick-fry in pre-heated cooking oil. Transfer to a pot, add butter and some water, and stew covered for 30-35 minutes.
